Oh, how quickly the weekend passes and the work week begins! However since I don’t have to be at work till 2pm, I still get to sleep in
Since I had to work on Friday night (one of the things that sucks about my schedule), I missed my friend’s party so I had the girls over for dinner. I have a slight obsession with table linens and napkin holders so I always welcome an opportunity to set an elegant table. I had pictures BUT my camera has decided not to transfer pictures to my computer.
Hate to use this word but I love my tablescape. It’s definitely not as tacky as the majority of Sandra Lee’s normal tablescapes…
She even dresses to match her table!

Not to totally hate on Sandra Lee. Her tablescapes are a bit outrageous but obviously take lots of work and creativity. And hey, to each their own!
Anyways, I started off with a homemade hummus recipe from Isa Chandra Moskovitz‘s new book Appetite For Reduction. I love this book and highly recommend it! I served the hummus with carrot sticks, broccoli, and fat free pita chips from Trader Joe’s (highly recommend these as well).
For dinner I served a simple salad with romaine, kalamata olives, fat free feta (another Trader Joe’s favorite), heirloom cherry tomatoes, and zucchini dressed with fat free balsamic vinegarette from Whole Foods.
For the entree I chose Greek Chicken Pasta and I followed the recipe closely except I used zucchini instead of red onion. And I added more lemon juice after I had combined mixed the pasta and chicken mixture.
And for a delicious Mediterrranean dessert, I took apricots and topped them with Greek yogurt, chopped pistachios, and honey based on this recipe.
Dinner was delicious and I enjoyed my friend’s company. We enjoyed a bottle of Mediterranean red wine (another Trader Joe’s) and spent the night talking. Nothing like a Sunday evening with good friends and delicious food to make the start of the work week more bearable.
